Well now, I’m pretty sure my favourite food is FRIED CHICKEN Chop up your chicken into 10 pieces (don’t be afraid) ————— Brine in buttermilk for at least 4 hours with half of a spice mix made up of of: Salt, Paprika, Cayenne, a little Garlic powder, lots of Black Pepper, Oregano and maybe the most important of all: MSG (it makes all the difference and is *not bad for you* —————- Mix the other half of the spice mix with flour, cornflour & a teaspoon of baking powder. A few tablespoons of the buttermilk mix into into the flour & mix around (this really helps clump all that coating onto the chicken and gets you those great crunchy scraggly bits (genius tip @kenjilopezalt) —————- You can deep fry but I did mine in the cast iron - maintain the temperature of oil at approx 300f/150c. If you think it’s starting to burn finish in a 180c oven for a few mins. —————- Made a “country gravy” with the pan drippings and served with mash including an obscene amount of butter. Garnish with thyme & lemon. The lemon cuts though and really makes a difference. —————- Not quite 11 secret herbs and spices but I think this is something The Colonel would be happy with . . . . . #friedchicken #homecooking #instafood #foodporn #dinner #food #cooking #chef #homechef #foodie #delicious #foodblogger #foodphotography #tasty #kitchen #instagood #foodgasm #recipies #eat #recipie #chicken #foodlover
