We're already familiar with milk, dark and white chocolate, but now we can be braced for a new form.

It's because chocolatier Barry Callebaut has unveiled a new 'ruby' chocolate.

80 years on from when the goodness of white chocolate came into our lives, the latest creation comes from the ruby cocoa bean, and it's thought to create a chocolate that is of 'intense taste' with 'a characteristic reddish colour.'

According to the chocolatier, "The fourth type in chocolate offers a totally new taste experience, which is not bitter, milky or sweet, but a tension between berry-fruitiness and luscious smoothness. To create Ruby chocolate no berries or berry flavor, nor color, is added."

Anybody else think it looks like the pink mice? If it tastes anything like the mice then we're in for a huge treat!
