Guinness Cupcakes with Bailey's Buttercream

Ingredients
½ cup Guinness
¼ cup vegetable oil
â…“ cup unsweetened cocoa
1 cup all purpose flour
1 cup organic white sugar
¾ tsp baking soda
½ tsp baking powder
¼ tsp pink salt
1 tbsp ground flax
3 tbsp water
â…“ cup unsweetened coconut yogurt
vegan Baileys frosting (recipe below)
Green sprinkles or shamrock shapes

Instructions
Preheat oven to 350F and line cupcake pan with liners. Use green ones for extra festiveness.
In a medium saucepan combine stout and vegetable oil and bring to a boil. Reduce to a simmer and whisk in cocoa powder until smooth. Remove from heat and set aside.
In a medium mixing bowl sift together flour, sugar baking soda, baking powder and salt. Set aside.
In a large mixing bowl whisk together flax and water and set aside for 5 mins.
Add yogurt and whisk until smooth, slowly adding in beer mixture.
Fold the flour into the batter until combined.
Pour batter into liners , filling them ¾ of the way. Baking for 20- 22 minutes or until a toothpick comes out clean when inserted. Transfer to cooking racks and allow to cool for 30 mins or until cooled completely.
When cool, spread with Baileys buttercream frosting (below) and top with sprinkles.

Shamrock Shakes

So we know you don't bake a shake but the words rhyme, so that's good enough for us.

Ingredients

2 cups vanilla ice cream

1 1/4 cups milk

1/4 teaspoon mint extract, or more to taste

9 drops green food coloring

2 tablespoons chocolate syrup, or to taste (optional)

2 tablespoons whipped cream, or to taste (optional)

1/2 teaspoon green decorator sugar, or to taste (optional)

Instructions

Blend ice cream, milk, mint extract, and food coloring together in a blender until smooth.

Drizzle chocolate syrup around inside walls of 2 tall glasses; pour shake into glass. Top with whipped cream and green decorator sugar.

Green Velvet Cupcakes

Ingredients

2 1/2 cups all-purpose flour
1 ½ cups sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cocoa powder
1 ½ cups vegetable oil or canola oil
1 cup buttermilk
2 large eggs
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract

Cream Cheese Frosting

1 pound cream cheese, softened
2 sticks butter, softened
1 teaspoon vanilla extract
4 cups sifted confectioners' sugar
Green sanding sugar and shamrock candies for garnish

Instructions

Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake liners.

On a piece of parchment paper, sift together the flour, sugar, baking soda, salt, and cocoa powder and set aside. 3. In a standing mixer gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla until all combined. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.

Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, check the cupcakes with a toothpick for doneness. Remove from oven and cool completely on a rack before frosting.

For the Cream Cheese Frosting

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. Add the sugar and on low speed, beat until incorporated. Increase the speed to high and mix until very light and fluffy.

Using a piping bag with a star tip add some frosting inside it and pipe out the frosting onto the cupcake, you may also just use a knife or spoon to frost the cupcakes as well. Finally garnish with green sanding sugar and shamrock candies!
