It looks like the blue skies are sticking around for another while so time to jazz up the pre-drinks with a refreshing gin and tonic ice lolly.

It's refreshing and requires minimal effort - what more could you want?

Here's how you do it:

What you need:

  • 100g caster sugar
  • 80ml gin
  • Juice of 1 lime
  • 225ml tonic water
  • 4 slices of cucumber, cut in half
  • 8 raspberries
  • 8 ice lolly moulds and eight lolly sticks

Method:

1. Mix the sugar with 50ml of cold water in a small saucepan and cook over a low/medium heat until the sugar has dissolved. Set aside to cool completely.

2. When cool, put the sugar syrup in a pouring jug with the gin, lime juice and tonic water, then mix together.

3. Put a cucumber slice and a raspberry into each of the lolly moulds, then pour the mixture evenly into the moulds.

4. Add the lolly sticks and put in the freezer. Freeze until solid then enjoy your gin lollies to your heart's content!
